Yet Another Unique Affair

A French Riverside Picnic Theme was the centerpiece of this special evening created for the opening of Impressionists on the Water at PEM last week.

- Tiny Coq au Vin Morsels with Roasted Potato Rounds, White Wine-Poached Chicken with Gran Mere Garniture of Smoked  Bacon, Pearl Onions, Mushrooms and Carrots

- Moules Mariniere – Classic French Mussels in White Wine Sauce

- Pommes Allumettes in Cones Served with Herbs de Provence-Infused House-Made Mayonnaise

Passed Foods by the Bite

- Oeufs en Meurette – Red Wine-Poached  Quail Eggs on a Tiny Ficelle Toast with Herbed Carrot Puree and Onion Jam

- Salade aux Legumes – Marinated Three Bean Salad Served in a Spoon with Candied Shallots and Chervil Vinaigrette

- Braised Short Rib with Celery Root Puree in a Spoon, Burgundy Reduction

` Shrimp Remoulade

- Catfish Bite, Beurre Noisette, Braised Leeks in an Edible Toast Spoon

- Cider-Braised Pork Tenderloin, Pumpkin Puree and Cinnamon-Infused Brie Served on a Tasting Fork

- Wild Mushroom Compote atop Potato Rounds, Thyme Beurre Blanc Drizzle


- Crepes Dessert Station with Nutella, Whipped Cream, Fresh Lemon Juice, Sugar, and Preserves
