Sometimes just a simple bowl of well-made soup is all the delight I need. Today we have such a soup -- a wonderful, chilled soup called White Gazpacho. It was made by our Executive Chef, Steve Nelson, and consists of a marriage of both pureed and diced fresh vegetables, seasoned with a lot of cilantro and just a touch of garlic. The vegetables include fresh heirloom yellow tomatoes, jicama (for crunch), cucumbers, red peppers, and the chef's secret ingredients.
It really sings of summer!
