A very dear relative of mine, knowing how much I love food and cooking, recently sent me something he found -- a poem called "Ode to Dining" that I thought I would share with you. It really should be called "Ode to the Cook", which is why I thought to post this photo of our Executive Chef, Steve Nelson (far right), and his three Sous Chefs (right to left, Ken O'Keefe, Executive Sous Chef; Jenn Normant, Banquet Chef; and Brooke O'Keefe, Offsite Sous Chef at the Peabody Essex Museum).
Here is the poem, which the source says was found on the wall of a pub in Ascot, England:
Ode to Dining
We may live without poetry, music and art,
We may live without conscience and we may live without heart,
We may live without friends, we may live without books.
But civilized man cannot live without cooks.
He may live without books, what is knowledge but grieving,
He may live without hope, what is hope but deceiving,
He may live without love, what is passion but pining,
But where is the man that can live without dining!
